Today isn't really Day 1, because I didn't do a lot of my research, menu planning or anything like that until today.
A very wise, health-conscious, crunchy friend of mine gave me this piece of advice - Create a weekly meal plan.
So here is tomorrow's menu.
Snacks: Cheese strings, Apple Crisps (they're like chips, but apples)
Lunch: Asian Cucumber Salad (recipe below)
Dinner: Broiled Chicken with Cajun spices and Asparagus
Ok.. that wasn't so bad. I tried this Cucumber salad business for dinner tonight, and I quite liked it. I'm not much of a breakfast person - I usually have a snack at about 10 AM, and call that my 'breakfast'.
Salad Dressing:
1 Tbsp white vinegar
1 Tbsp vegetable oil
1 Tbsp soy sauce
1 packet Splenda
1/2 tsp ginger
1/4 tsp white pepper
1/4 tsp of garlic powder
Ingredients:
1 cucumber - peeled, sliced
2 green onions
handfull of almonds
handfull of cashews
bean sprouts
snow peas
Mix the stuff for the salad dressing in a separate measuring cup.
Slice all veggies, and throw them and the nuts in a bowl
Toss with dressing.
Pretty simple, huh? Very tasty, and not too bad for someone who isn't a big salad fan!
