Day 1

Today isn't really Day 1, because I didn't do a lot of my research, menu planning or anything like that until today.

A very wise, health-conscious, crunchy friend of mine gave me this piece of advice - Create a weekly meal plan.

So here is tomorrow's menu.

Snacks: Cheese strings, Apple Crisps (they're like chips, but apples)
Lunch: Asian Cucumber Salad (recipe below)
Dinner: Broiled Chicken with Cajun spices and Asparagus

Ok.. that wasn't so bad. I tried this Cucumber salad business for dinner tonight, and I quite liked it. I'm not much of a breakfast person - I usually have a snack at about 10 AM, and call that my 'breakfast'.

Salad Dressing:
1 Tbsp white vinegar
1 Tbsp vegetable oil
1 Tbsp soy sauce
1 packet Splenda
1/2 tsp ginger
1/4 tsp white pepper
1/4 tsp of garlic powder

Ingredients:
1 cucumber - peeled, sliced
2 green onions
handfull of almonds
handfull of cashews
bean sprouts
snow peas

Mix the stuff for the salad dressing in a separate measuring cup.
Slice all veggies, and throw them and the nuts in a bowl
Toss with dressing.

Pretty simple, huh? Very tasty, and not too bad for someone who isn't a big salad fan!
These things always start with a back story, right? Well, here's mine, in a nutshell.

- 25, soon to be 26 year old female
- I have a wonderful boyfriend of 3 years
- We are trying to have a baby. We have been "trying" for almost 2 years now (Oh, I'm sure you'll hear lots about that later!)
- I was recently diagnosed with PCOS.


In June of 2008, I found out I was pregnant (almost 9 weeks!) and on September 22, 2008, our world came crashing down when I lost our gorgeous daughter to PPROM.

We've spent the last 2 years trying to get pregnant again. I've fought the delightful Canadian Health Care system tooth and nail, and finally in December of 2009, I became a patient at the Regional Fertility Program. Endless tests, like an HSG, pelvic ultrasounds, and about a billion blood work ups were done and my diagnosis was this: blocked right tube and PCOS. The solution? Clomid.

In June of 2010 (there's something about June!) I found out I was expecting again. Needless to say when I began bleeding again, the world once again came crashing down on me.

So, after more Doctors appointments, one thing became evident. I need to change my lifestyle in order for this PCOS business to get under control.

If you don't know a lot about PCOS, here's the basics: Stands for Poly Cystic Ovarian Syndrome. It causes cysts on your ovaries, and makes you insulin resistant. Your hormones get out of wack, your cycles become irregular. Weight gain is also a common issue with PCOS. There is no cure for this disease. Only treatment.

What is that treatment, you ask? Well, some Dr's prescribe a drug called Metformin, and some reccomend a low carb diet, which brings me here to this blog.

I love carbs.

I'm ok with admitting this, and truthfully the hardest part of this is going to be changing up my diet. Expect a lot of ranting and raving, and whining about the foods I miss.
